When I’m not busy making delicious chocolate treat for you all to enjoy, I love to relax on a weekend and bake with my family and friends. Here is one of my favourite cake recipes - of course it has to be some sort of chocolate infused cake!
Dark Chocolate Orange Fudge Cake
20cm cake tin with removable bottom
1-tablespoon ground almonds (plus extra for dusting)
300g dark chocolate minimum 65% cocoa solids
275g caster sugar
165g unsalted butter
Pinch of salt
5 large eggs
½ a teaspoon of natural orange extract (or to taste)
Zest of one orange
Icing sugar to dust
- Preheat the oven to 180C/fan 160C/gas 4. Butter the 20cm cake tin and dust with the ground almonds - shake off any excess.
- Melt the chocolate, caster sugar, butter, orange extract, orange zest and salt in a heatproof bowl over a pan of hot water (not letting the water boil only simmer)
- Whisk the eggs with the ground almonds and fold into the chocolate mixture. After a few minutes the mixture will be thick and ready to pour into the tin. Bake for 35-45 minutes.
- Remove the sides of the tin and leave the cake on the base to cool, then dust over the cake with icing sugar.
*Tip* – After a night in the fridge I will be fudgy and gooey and at my best! I can be frozen and still work well in a semi frozen state for something a little different with ice cream! Enjoy!
